Traditionally, Italian sausage contains fennel and black pepper. Typically the black pepper used in Italian sausage is a coarser particle size than you find in fresh pork sausage. Fennel is the spice that gives Italian sausage its Italian flavor. Often the fennel is a mixture of whole or cracked fennel seed and ground fennel. The whole or cracked fennel seed will help to give good visibility to the spice while the ground fennel will contribute a very distinctive fennel flavor. Visible spice is typically considered to be an important product characteristic in fresh Italian sausage.

Other spices often found in Italian sausage are coriander and caraway. For Hot Italian Sausage add crushed and/or ground red pepper.

What To Make With Italian Sausage

You can use homemade ground Italian sausage in literally any recipe that calls for it. Here are some tasty ideas to get you started:

  • Salt and pepper
  • Red chili pepper flakes, optional

I used my Curtis Stone mortar and pestle to grind the fennel seeds. Youll want them coarsely ground vs a fine powder. You could also use a coffee grinder, though again, be sure not to grind them too fine.

Next, add the herbs and spices to a large bowl with extra virgin olive oil and red wine vinegar then whisk or stir with a fork to combine.

Step 2: Mix with ground pork.

Add the spice mixture to ground pork then use your hands to mix until just combined being careful to avoid over mixing.

The sausage is technically ready to use immediately at this point, though the flavor is best if it sits in the refrigerator overnight before cooking. You could also freeze it at this point!

Spicy Italian Sausage Seasoning

For this recipe, I am using a pork butt roast. I like them the best for sausage making because I think it has the right amount of marbling in the meat.

You want to choose meat that has some fat content to it. Pork loin is very lean, and it wouldnt make a great sausage. Honestly, any large cut of pork with marbling will work. I let whats on sale be my guide when making homemade Italian sausage.

How Much Seasoning Do I Need To Make A Pound Of Sausage

Generally speaking, you will want to use two tablespoons of sausage seasoning for each pound of meat. This can vary slightly based on how spicy you like your sausage. Some people also like to use slightly less with mild proteins like chicken or turkey and slightly more with more pungent proteins like beef, game meats, or a high fat pork.

Sausage is basically a mixture of ground meat, fat, salt, sausage seasonings, preservatives, and sometimes grains or breadcrumbs for fillers or extenders. How To Make Homemade Italian Sausage

Keep in mind this is intended to be used as bulk Italian sausage in recipes . It can be used to make sausage patties if desired.

  • Mix all of the ingredients thoroughly in a large bowl !
  • Cover the bowl with plastic wrap and refrigerate for at least 4 hours or overnight.

    Fast & Easy Italian Sausage Seasoning DIY

    This is the easiest recipe of all time. Basically, you just want to stir together 2-4 of your favorite dried Italian herbs , add spices like ground fennel, paprika , black pepper, and ground garlic.

    You can change up the herbs or add ground onion or celery seed, but I think the fennel and paprika are super important!

    I like mine spicy, so I add cayenne pepper. Red pepper flakes work too, but I find that their large size is somewhat of a barrier to them mixing well and they tend to sit on the top – making your first few dishes spicier than the rest!

    The earlier you mix the seasoning into the meat, the more “sausage-like” texture the meat will get.

    Where Do You Buy Italian Sausage Spices On A Budget

    This is the crucial question: where to buy all these great spices without spending an arm and a leg? Generally speaking, I’m somewhat partial to organic spices.

    However, spices are expensive, and organic spices are CRAZY expensive at most stores! When I’m in a bind, I’ll sometimes check out the sales at the regular grocery stores and go for Simply Organic, Frontier Co-op, or O-Organics, or use bulk bins at stores like Sprouts, Whole Foods, and Mom’s Organic Market if I just want to get a small amount of each spice.

    I do often buy some spices at Trader Joe’s for just $1.99, but they have pretty limited options, so it’s not usually my first choice.

    What I mostly try to do is save all my jars and buy bagged spices from Thrive Market! Each of these bags of organic spices was just $2.99 on Thrive – significantly cheaper than most other locations. I love ordering from Thrive and I highly recommend it if you don’t live in an area with easy access to health food stores, or if you like saving 20-50% on non-perishable pantry goods!

    Can I Use Ground Pork Or Do I Have To Grind The Meat Myself

    You can do either. The easiest option is to buy quality ground pork and simply add the seasonings.

    If you prefer to have full control over the quality of meat and the muscle-to-fat ratio you can grind your own.

    You sure can! There are several ways to do it.

    Blocks: I like to weigh the uncooked sausage into 1 pound blocks. Then I wrap it in freezer paper to use later in my cooking.

    Patties: Some folks make homemade breakfast sausage patties. Then they freeze the sausage patties for their weekend breakfasts.

    Links: If you’re ambitious, you can put the sausage mixture into casings and freeze those.

    Cook and freeze: My neighbor back in Colorado liked to cook and brown her sausage meat before freezing. That way she saved time when making her sauces and casseroles.

    What Kind Of Salt Should I Use To Make Sausage

    For starters, that iodized salt you have sitting in your cabinet is not good for sausage making, so just stop right there if you’re planning on reaching for that salt. You want something more interesting, and luckily salt has a lot more variety than just your run of the mill table salt. When making sausage you will want to reach for a high-quality salt, likely a sea salt or a flaked salt. Salt doesn’t just add flavor to the sausage, it will also help bind and preserve the meat. To test if the salt you want to use is high quality, drop some in a glass of clear water. A teaspoon of salt should do just fine for a regular glass of water. If after the salt has dissolved, your water is still clear, you’re golden. If your water turns cloudy, you’ll want a different salt. Cloudy water is indicative of a metal heavy salt that will mess with your sausage’s pH level, so you want to be sure to test your salt before adding it to your recipe and messing up your sausage. Keep in mind that different types of salt, for example flake salt and purified salt, have different weights and therefore may need to be adjusted for your recipe. Be careful not to alter the salt in your recipe too much, as it may change the level of preservation.

    Chop pork butt into pieces that are 1 to 2 inches in size. Place pork pieces into a bowl.

    Add dry red wine, salt, cayenne pepper, fennel seed, paprika, crushed red pepper, garlic, chopped parsley, and cracked black pepper.

    Stir the mixture to combine and coat the meat evenly. If desired, cover with plastic and allow the meat to marinate for a few hours before grinding.

    Pass the meat with a meat grinder fitted with the medium-sized die. Or place the meat into a food processor in small batches and process until finely ground.

    You can test the seasoning by cooking a small portion of the sausage, if desired adjust for seasoning.

    Freshly ground Italian sausage should be used within 48 hours or can be frozen.

    Hey everyone, today Im sharing a super simple and quick recipe that I use ALL THE TIME! This Homemade Italian Sausage Seasoning Recipe is a game-changer when it comes to making all my favorite Italian meals, and I think youll love it!

    My family loves Italian meals, and Im guessing if youre anything like us, you do too! I especially like Italian sausage and use it all the time in meatballs, Italian soups, casseroles, on pizza, and even in meatloaf .

    In full disclosure, I used to simply buy Italian sausage whether it was Italian pork sausage, turkey sausage or Italian sausage links. I thought it was easier to just buy it, and it was.
